BIOPHYSICOCHEMICAL PROPERTIES:
- Stable from pH 3.0-9.0, inactivated at pH 10.0;
- Thermostable, activity is retained after incubation at 100 degrees Celsius for 15 minutes;
- Antimicrobial activity is lost upon treatment with beta-chymotrypsin, proteinase K and papain, but not when treated with lysozyme or lipase.
