FUNCTION: Bacteriocin with a narrow antibacterial spectrum. Antibacterial activity against the Gram-positive bacteria
L.plantarun, L.pentosus, L.curvatus, L.lindneri, L.mesenteroides and E.faecilis. Lacks antibacterial activity against the Gram-positive bacteria L.brevis, L.sakei, L. lactis, P.acidilactici, B. subtilis, B. cereus, L. monocytogenes and S.aureus, and against the Gram-negative bacteria E.coli and S.typhimurium.
BIOPHYSICOCHEMICAL PROPERTIES:
pH dependence:Stable from pH 5.5-8.5
Temperature dependence: Thermostable, activity is retained after incubation at 90degrees Celsius for 15 minutes
SUBCELLULAR LOCATION: Secreted.
PTM: Contains 2 disulfide bonds (Probable).
MASS SPECTROMETRY: Mass=5045.72; Method=MALDI; Range=22-64;
